Has anyone used this CD drive on a 1680? I noticed it on sale as a compatible cd drive for the Roland VS series.

and possibly find a more recent thread summarizing the compatible external scsi cd drives, if you search a while.
I don't know the manufacturer of the actual drive that's in the Yamaha - but I've never noticed a Yamaha brand cited as being compatible with the very picky VS recorder.
Maybe if you provide us with a link to the one you're considering buying, someone may see some info on the page that tells them whether or not it is actually likely to be compatible, or just a gimmick to get people looking at it.

It was listed on ebay and popped up when you typed in VS 1680

After finding and reading this seller's listings, it appears they have a history with the Roland VS and the burners. Seems like they can be trusted to have compatible burners (at least). I can't say a thing about them other than that.
Maybe worth checking out that last one they have listed.

I don’t mean to hijack this thread, but is there any alternative to a CDW such as a SCSI to SD or USB? I’ve tried to find a reasonably price replacement writer as well and they are either way more than I can spend or gone immediately. Obviously a lot of us out there fishing for these!

There's an actual CDRII on ebay usa right now and I saw a couple of Plextor W1210TSE, which is the burner I think Roland settled on somewhere along the way and is probably what's in that CDRII shell. I realize they are expensive, but at least these 2-3 are half as much (or less) than the 575, 675, 750.00 we used to pay when they were fairly new. I think my first one - the lowly CDRI, which was only 4x write speed for CD-R (IIRC), cost me at least 650.00 - miserably expensive back then.
I do not believe that anyone has ever reported to have discovered an alternative/adapter that the Roland can use - especially to create and read backup discs.
Your only real scsi alternative is to buy the VirDIS system from Bill Casey, if he's still making them and that would be a great alternative for backing up and reading (and editing) - but there are many caveats - pc only, pci and pcie card only, only VS units that have export/import ability can utilize a pc's burner... and it's around 300.00

That’s helpful info. At least I know a replacement CDW is pretty much the only way to go. I’ve read in some threads about using the master outputs to record 2 tracks at a time to DAW software to create wav files. While I see this as being time consuming, more of a concern is it seems some fidelity would be lost in the “bounce” process. Am I thinking too analog?

Most times I think people are using the digital output and using a computer interface that has the likewise digital input capability - same and/or adjustable sample rate is very key here.
Regardless, if you use analog output to analog input, the computer interface should be of sufficient quality (low noise floor, low distortion, etc.) to reproduce a nearly identical recording. I, for instance, spent the first 2 months with my first pro-level computer, transferring many multi-track songs from the Roland, through a RME Hammerfall Multiface interface, which had 8 high quality analog inputs on it (besides spdif 2-track digital like the VS). My purpose was to keep all or as many of the individual tracks in the transfer and that is why I chose to use sets of 8 analog passes, rather than 2-track summed mixes, or even 2 tracks in a pass through the spdif route. The end result was extremely satisfying.
