Why don’t acoustics come with the neck set back ?
Which models do ?

It is where the neck tilts back. I think Rolf that there is not enough options. It is possible that a luther can convert your regular acoustic to a tilt back.

Do you mean the headstock? Most acoustic guitars have a headstock set at an angle. (No string trees.) The neck angle will affect the action. If you change the neck angle, you will need to alter the bridge to account for the action. For a Martin style guitar, the bridge can only be so tall. If the saddle is too tall, it may crack the bridge. If the bridge is made thicker, it may kill the tone or make deformation of the top, due to creep deflection, worse. Archtop and Gypsy style guitars are a different animal. You may want to check those out.

I mean removing the neck and re shaping the heal so that the entire neck ‘tilts’ back , as per a strat with a shim in the neck joint or a micro tilt on a three bolt strat . I don’t mean is there an acoustic with a micro tilt set up , I mean an ofc the shelf stock acoustic with this adjustment already done .
It seems crazy to me that 99% of acoustics arnt built with a set back neck like this .

What you are describing is basically what is done to reset a neck. If the bridge and action are good, you will be affecting that. You'd end up having to make the bridge taller to tilt the neck back. I don't think this is feasible for a Martin style x-braced guitar for any significant change in neck angle.

Like TVL said, the bridge would have to be higher, and I would think it would have to have a bridge and tailpiece like a hollow body guitar, not to mention a block under the bridge like they do. So it wouldn't be a traditional acoustic. Whether or not that matters to you, only you would know.

The intonation and string height is very carefully set and adjusted on a good acoustic. What more do you want from it?
I guess I am still not picturing what you mean by "set back".

yeah I mean that is standard truss rod adjustment. but it is generally REALLY small adjustments
It is also available in almost all acoustics??? So what is it Rolf wants?

The diagram looks like it's made to explain a neck reset. A very small change in the neck angle is made by pulling pieces of sandpaper between the neck joint after the neck is unglued. This slightly thins the heel at the back end. They usually end up having to add a tapered shim below the fingerboard. The change in neck angle is barely noticeable, but it affects the action quite a bit. If it is over-done, the bridge will end up being too tall.

Yes! That diagram is what I’m saying . I call it set back , seems another description is is neck re set . All I’m trying to achieve is the same as tilting the neck angle back like I do on my strats with either a shim or a micro tilt adjuster, on an acoustic that involves shaving the wood slightly as per the diagram . Both my acoustics needed this right out of the box , why don’t manufacturers make guitars with this adjustment already done .
Most acoustics are great for open chord heavy string strumming etc .. but to get a low action whilst keeping a good string break angle and decent relief I find tough . I’m forever wishing I could tilt the neck angles like I can on my strats . I want to play my acoustic like I do my strats , not just strum along as a backing to a vocal . I want a lower action without having to ramp the bridge to keep the string break angle over the saddle . It’s a bit like a violin, tilted back neck angle with a high saddle still ( only not as pronounced).
I know this can be done by a luthier , I could probably do it myself with time and patience etc , but I’d much rather buy a guitar already designed like this to start with . Hence my question .
I like the look of those gypsy guitars

Many manufacturers, such as Taylor, are making acoustic guitars with necks that are actually bolted on. It makes it much easier to reset the neck by simply unbolting it and using proprietary shims to adjust the angle of the neck. It probably isn't a job for the average guitar player, but it's not difficult or as risky for a trained repair person. There's no heating or steaming out a neck or anything like that where you can do alot of damage. Martin does something like this on some guitars too. I had one of those SC-13's for a while, and the neck attachment is adjustable on those. They are not glued in, like a D-18 or D-28.
Resetting a glued-in dovetail joint is definitely a job for an experienced professional. It's delicate work, and alot can go wrong. Plus, you will need specialized tools. I recommend watching some youtube videos of pros doing this. You will see that it's alot of work. Some guitars are notoriously difficult to work on, like those old sort-of collectable orange label Yamaha's and some Gibson acoustic guitars.
